Their Pommard Tavannes comes from a single vineyard just outside the famed Les Epenots climat, where limestone-rich soils lend structure and finesse to this traditionally robust appellation. The 2022 vintage, shaped by a warm but balanced growing season, offers impressive depth while maintaining the freshness that defines great red Burgundy.

Deep red and black cherry form the core, layered with crushed violets, forest floor, and a touch of spice. The tannins are firm yet polished, giving the wine a strong backbone without overwhelming its purity. While Pommard is often known for its power, this bottling leans into precision and minerality, offering a long, lifted finish that promises graceful evolution in the cellar.

Ideal with roasted duck, mushroom dishes, or a classic beef Bourguignon, this is a Pommard that delivers both structure and nuance. While already showing well with some air, it will continue to develop beautifully over the next 10–15 years.

"Aromas of plums, cocoa powder, licorice and mint introduce the 2022 Pommard Tavannes, a medium to full-bodied, supple and velvety wine that's lively and suave, concluding with a saline finish. Laurent Pillot's son Adrien is gradually taking the reins at this 15-hectare estate, and the domaine's wines continue their qualitative progression. Organic certification begin in 2022. Fruit is now harvested in 13-kilogram trays and refrigerated in a cold room before vatting. Extraction and clarification enzymes have been banished. Reds are destemmed and see long macerations, with punch-downs occurring later on in maceration in the past, while élevage has been extended and cooperage choices refined (Tonnellerie Billon is now a favorite). White wines also go to barrel with more lees. If Pillot can continue this evolution, this Chassagne-Montrachet stalwart will soon become a benchmark." —William Kelley
