A walled monopole inside a small Meursault premier cru, and one of the most singular wines Jean-Marc Roulot makes. Clos des Bouchères is a 1.38-hectare clos carved out of the 4.4-hectare Les Bouchères climat, planted in 1950 and 1980, which Roulot acquired in 2011; its shallow, stony soils sit over oolitic limestone laced with marl and clamshells, and the domaine's importer credits exactly that for the salinity that runs through the wine. The domaine characterizes it as a stony vineyard, the one most like Perrières — high praise in this commune. The winemaking is deliberately hands-off: natural yeasts only, a year on lees in barrel and six months in vat, with new oak kept on a short leash so the limestone does the talking. The Roulot story is a good one too — two generations ago the family was known for Burgundian brandy and eau de vie, and Guy Roulot used that success to assemble small Meursault plots, becoming a 1970s pioneer of bottling individual lieux-dits; after his unexpected death in the early '80s, Jean-Marc left an acting career in Paris and came home in 1989. 2023 was an abundant year across the Côte de Beaune, where whites came in 26.3% above the five-year average.

Perfect Pairings

Turbot or sole in beurre blanc, grilled langoustines, raw oysters on the half shell, scallop crudo with lemon, or roast chicken with butter and herbs. Also excellent with sushi and sashimi, where the salinity does the work of soy.

Tasting Profile

Dry white Burgundy from Chardonnay, built on stone rather than butter. Expect citrus and orchard fruit with a chalky, saline mineral streak, white flowers, and only a whisper of oak. Medium-bodied, firm and clean in acidity, with a long dry finish that leaves a salty edge. Serve cool, not cold, and give it air.
