A dry white field blend from vines over a hundred years old in volcanic soil on Tenerife's northern coast. You won't find many whites further from the mass-produced kind. Táganan is the Guanche word for "slope" (Guanche being the islands' native language), and the name fits: the ground is so rugged that all the farming is done by hand, the vines grow untrained, and animals usually carry the grapes out at harvest. Envinate farm these parcels, which sit between 75 and 300 meters, with about 15 local families and use no chemicals. The blend is a roll call of native Canarian grapes, including Malvasia, Albillo Criollo, Gual, Marmajuelo, Forastera Gomera and Listán Blanco, and some of the others have never been identified. In the cellar they keep it simple: hand-picked, foot-trodden, wild-yeast fermentation only. Envinate ("wine yourself") are four friends who met studying winemaking in Alicante, and this bottle shows why people love them. Wine, first and foremost, is about pleasure.

More about Envinate

Just a couple of years ago the wines of Envinate were very, very off the radar. Like everything in the world of delicious, naturally made wines, that has changed! Now we eagerly anticipate the next release, get just a case or less of each cuvée, and then watch them disappear in the blink of an eye.

For those unfamiliar, the group of four friends behind the project have nailed a locals' perspective on growing areas that the world is just coming to appreciate. Between Ribeira Sacra and the Canary Islands, they bottle clear expressions of the vineyards with which they work. Having started Envinate as a consultancy while in enology school, the friends set out to enrich the communities within these historically neglected areas. By splitting up and living in each of these regions, they have been able to foster relationships with older generations of growers and farmers allowing them to identify the best vineyard sites with a collective understanding beyond their experience.

With a strong technical education, The Four craft wines of precision and clarity. Never manipulated, never doctored, and a lack of chemicals in the vineyard, these wines are liquid art, a purists expression of terrior. They honor not only the region from which they come, but also the local stewards who have cared for these vineyards, often for generations.

Tasting Notes & Food Pairings

Perfect Pairings

Grilled octopus with smoked paprika and olive oil; papas arrugadas with mojo verde; sea bass ceviche; raw oysters; salt-baked whole fish with lemon and herbs.

Tasting Profile

Expect a dry, saline, distinctly volcanic white: lemon, green apple and pear with smoky, flinty notes and a whiff of sea spray and herbs. Old barrels and concrete typically lend texture rather than oak flavour, so the body is medium and the acidity bright. Think the salty, mineral cut of a good Chablis, finishing long and briny.
