Sand is the whole story here. Willow sits on the east side of Seneca Lake in Lodi, on Aurora and Farmington silt loam over shale, and its finer, sandier soils are what set it apart from Forge's other lieux-dits — the house calls it the quintessential starlet of the range, prized for elegance and lift rather than muscle. Its neighbor Railroad is less than half a mile away on heavier, gravelly loam, farmed identically and handled identically in the cellar, which makes the pair a small master class in how much dirt matters. Forge Cellars is the Seneca Lake project of Louis Barruol, the Rhône vigneron behind Château de St.-Cosme in Gigondas, with wine professional Richard Rainey; since debuting in 2011 they've become the reference for bone-dry, site-driven Riesling on the lake's southeastern shore. Like the rest of their Rieslings, this is spontaneously fermented in neutral barrel and bottled dry. Single-vineyard Riesling of this specificity is remarkable quality for the price — and it's grown three hours from Manhattan.

Seared scallops with lemon, crab cakes, oysters on the half shell, sushi and sashimi, fried chicken with hot honey, Thai green curry, roast pork with mustard and apple, or a good Alsatian onion tart.

Tasting Profile

Dry and light-bodied, with citrus and orchard fruit aromas and a stony, faintly saline edge. Bright, racy acidity, no perceptible sweetness, and a clean mineral finish. Serve well chilled.
