Co-owner Niko Brandner built this one looking at Burgundy: a blanc de noirs — white sparkling wine made from black Pinot Noir grapes — meant to show how well Pinot Noir and bubbles together magnify a terroir. The fruit comes from two very different soils, granite in the Hessische Bergstraße and limestone in the Pfalz, and the wine keeps both signatures: the granite's salty, stony tension and the limestone's fuller frame. Prestige is Griesel's single-variety, single-vintage tier — a year in barrel, then roughly three years on the lees, then disgorged brut nature with zero sugar added, which leaves the fruit and the site completely exposed. Brandner came to wine from banking, trained with the German sparkling pioneer Volker Raumland, and has been running Griesel since the Streit family reopened the old Hessian State Winery cellars in Bensheim in 2013. What you get is Pinot power balanced against Pinot delicacy, held in tension right through the finish — at a level of ambition German Sekt was not associated with a generation ago.
