A single-varietal champagne made entirely from Pinot Noir grown in Hélène Charbaut's oldest parcels (planted 1921-1983) across Bisseuil, Mareuil-sur-Aÿ, and Avenay Val d'Or. The wine ferments on ambient yeasts in 228L used oak barrels, then ages 30 months on lattes with no fining or filtration. Charbaut's signature style: a very low dosage (sometimes none at all) that lets the wine's mineral character and fruit intensity shine. Les Pinailleuses epitomizes her vision of small-scale, uncompromising craftsmanship.
