Pinot Noir on volcanic basalt in the Auvergne, a pairing of grape and place almost nobody attempts, and the result lands closer to cool-climate Burgundy than to anything you'd expect from the Massif Central. Henri Chauvet left banking, trained with Thierry Allemand in Cornas, and took over Annie Sauvat's estate in Boudes in 2021, putting all of it into organic conversion in his first year. Vie Ordinaire comes from his most volcanic parcels, fermented whole-cluster with native yeasts and about two weeks on the skins in stainless steel, then aged about nine months in a mix of used barrels before bottling with almost no sulfur. It goes out as Vin de France rather than under the Cotes d'Auvergne appellation. The name means 'ordinary life,' which undersells it considerably; serve it with a light chill.

More about Henri Chauvet

Gamay, Pinot Noir and Chardonnay on volcanic basalt, high in the hills of the Auvergne: Henri Chauvet is making some of the most exciting wines in central France from a corner of the country most wine lovers have never thought to explore.

Chauvet, from Brive, left a career in banking and insurance for wine, earning his viticulture diploma by correspondence and training with two famously rigorous vignerons, Thierry Allemand in Cornas and Jérôme Bressy at Gourt de Mautens in Rasteau. In 2021 he took over Annie Sauvat's estate in Boudes, in the Côtes d'Auvergne, about 10.5 hectares that he put into organic conversion straight away. The slopes are steep enough that much of the work is done by hand or with a horse. Lower parcels sit on red clay with decomposed granite and limestone; the steeper sites are basalt laced with ochre marl.

In the cellar it's native yeasts, whole bunches, no fining or filtration, and sulfur decided vintage by vintage. Chauvet describes himself as “neither natural nor conventional,” and the wines bear that out: light, transparent reds, whites and even a Gamay blanc de noirs, with more smoke and salt than fruit.
