If you've been mourning the disappearance of cool, taut, old-school white Burgundy, 2021 is your vintage — frost and a cold summer slashed the yields and handed back wines with acidity, cut and modest alcohol. Jean-Philippe Fichet, who chases purity and precision even in warm years, was built for a season like this. His village Meursault blends several lieux-dits into a portrait of the entire commune: citrus and green apple, crushed stone, a hazelnut hum running underneath. The estate is small, the parcels are each under a hectare, the vines are old, and the wines are remarkably consistent year after year — and they still ask less than Meursault usually does. That last part won't stay true forever.
