Mes Sept Terroirs puts Joseph Colin's Saint-Aubin into one bottle: seven of his parcels in the village, blended into a single white Burgundy, and an easy way into his range. Two-thirds comes from Le Banc and Champ Tirant, and the rest from sites including Tope Bataille, Au Bas de Jorcul and En l'Ebaupin. The vines are more than 20 years old and grow at 350 to 400 meters on clay-limestone full of stone. That's high-altitude, rocky ground in a village that borders both Puligny-Montrachet and Chassagne-Montrachet. Joseph worked alongside his father Marc from 1993, starting at 19. After his older brother Pierre-Yves left in 2003, he ran Domaine Marc Colin with his two younger siblings, and in 2017 he took a little over six hectares to start his own domaine. He keeps a light touch in the cellar: this wine ferments with native yeast, ages in barrel and is bottled unfined and unfiltered. The premier crus get the headlines, but this is the bottle that shows what his Saint-Aubin holdings are about, without asking you to pay premier cru prices.

More about Joseph Colin

Joseph Colin split from the family estate in 2017 and launched his own domaine with 6.5 hectares in Saint-Aubin and Chassagne-Montrachet. His whole-bunch pressing, native yeasts, and minimalist approach yield 21 different cuvées—a young hand redefining what Côte de Beaune can be.

Tasting Notes & Food Pairings

Perfect Pairings

Roast chicken with tarragon cream; sole meunière; seared scallops with brown butter; gougères or a wedge of young Comté; mushroom risotto.

Tasting Profile

Expect the classic high-altitude Saint-Aubin profile: lemon, green apple and white peach, with a light hazelnut note from barrel ageing over stony, chalky minerality. It's medium-bodied with bright, tense acidity and finishes dry, saline and clean. Think of a leaner, more mineral version of neighbouring Puligny-Montrachet.
