Real-deal Koshu from Japan's Yamanashi prefecture, made from the country's signature pink-skinned grape and grown in the foothills below Mount Fuji. Katsunuma Winery has worked exclusively with Koshu since 1937, and owner Yuji Aruga gave his flagship a faux-Portuguese name, Clareza, meaning clarity, a nod to the theory that the Portuguese first brought European wine to Japan. This is a low-alcohol, delicate, mineral white built for the table rather than the spotlight. Fermented in stainless and rested in ceramic, it stays pure and crisp. If you've never had Koshu, this is the benchmark to start with.
