Li Sauruni sits at the top of Laura De Vito's holdings in Lapio, the village most Fiano drinkers agree is the grape's finest address in Irpinia, and it gives her most structured wine. De Vito started in 2018 with a deliberately narrow brief: Fiano only, three vineyard parcels, each bottled separately, all handled exactly the same way so the sites can argue their own case. That means a mid-October pick, a gentle press, fermentation in stainless steel, nine months on fine lees and then a long rest in bottle before release, with no oak at any point. The vines here were planted in the mid-1990s, high up around 600 meters, where cool nights keep Fiano's acidity intact through a Campanian summer. Give it a real glass rather than a small one; this is a white with the density to sit through a whole meal, and it will keep gaining for several years yet.
