Louis Chenu is one of the rare estates that makes red and white wines of equal quality, which is hard to believe in an appellation with so little material to work with (only 5% of Savigny is planted to white grapes). Les Saucours is one of their two white vineyards, planted with 65-year-old Chardonnay, along with a few Pinot Blanc vines—grandfathered into the appellation—that add complexity, body and spice to the blend.

After being pressed directly into oak barrels (15–25% new), the wine ferments spontaneously, go through malolactic fermentation and rests for a year, with minimal handling and racking before bottling. Lemon bars, orange blossom, cracked black and white pepper, and chalky minerality fill the mouth, sustained by a core of acidity that carries through to a long finish.
