Les Theurons sits right on the seam of Beaune, at the divide where the lighter premiers crus of the north give way to the fuller-bodied ones of the south—so it borrows a little from both, delicacy and depth in the same glass. It's long been considered one of the commune's finer sites, and Jadot destems the fruit and lets it ride out a long vat fermentation to draw out structure. That structure mattered here, because 2005 was one of the truly great, tannic, built-to-last red Burgundy vintages. Twenty-plus years on, this is a mature wine that still carries real grip and concentration—a Beaune with backbone. Give it air and enjoy it now.

Loaded with sap and juicy fruit character in the mouth, it juxtaposes tart freshness with creamy texture. Sage, resin, black cherry and a hint of maple syrup mark a savory finish that displays fascinating salty-sweet and fruit-smoked meat oscillation. Founded in 1859, Jadot is one of Burgundy's great estates and négociants, with 600 acres scattered across the region's best vineyards—Chablis to Moulin-à-Vent.
