This is Mâcon from one of the godfathers of natural winemaking in the region: old-vine Chardonnay, farmed organically, picked by hand and bottled without fining or filtration. Philippe Valette comes by his independent streak honestly. His father was the first grower in the area to stop selling his grapes to the co-op and bottle his own domaine wine. When Philippe finished wine school in 1990, he converted the family vineyards to organic farming. The old vines for this bottle grow in clay-limestone near Chaintré, a small village at the southern edge of Burgundy where the Mâcon meets Beaujolais. Across the estate, grapes are pressed directly, fermented with native yeasts and aged in old oak. If you think of the Mâcon as a source of simple everyday Chardonnay, this bottle makes a strong case otherwise, and it does so without asking for Côte d'Or money.
