Grower Champagne from Mareuil-sur-Aÿ, where the Hébrart family has made wine since 1963. Jean-Paul Hébrart took over from his father Marc in 1997 and has built one of the finest grower estates in the Marne. This Blanc de Blancs blends 88% Premier Cru Chardonnay from Mareuil with 12% Grand Cru fruit from Oiry and Chouilly. 36 months on lees, 6g/L dosage. The family farms 15.5 hectares across 75 plots—70% Pinot Noir, 30% Chardonnay—using organic practices. Estate Champagne from village specialists.

"Disgorged in May 2020, the new release of Hébrart's NV Extra-Brut Blanc de Blancs Premier Cru wafts from the glass with inviting aromas of Anjou pear, white peach, linden and brioche. Medium to full-bodied, elegantly textural and enveloping, it's bright and precise, with racy acids, a pinpoint mousse and a long, chalky finish.
