Marc Hébrart’s Champagne Mes Favorites Vieilles Vignes Brut NV is a masterful blend of tradition and terroir, crafted from old-vine plots in the heart of the Vallée de la Marne and the Montagne de Reims. This cuvée predominantly features Pinot Noir, with a touch of Chardonnay, delivering a wine of depth, balance, and complexity. Aromas of ripe orchard fruits—baked apple, pear, and quince—are joined by subtle floral notes and a touch of toasted brioche. On the palate, it reveals layers of honeyed citrus, hazelnut, and a whisper of spice, supported by a creamy mousse and vibrant acidity. The long, mineral finish reflects the chalk and clay soils of its origin.

Jean-Paul Hébrart, the visionary behind this family-run estate, employs sustainable viticulture and meticulous care in the cellar. The Vieilles Vignes (old vines) lend concentrated flavors and a deep connection to their terroir, while the use of partial barrel fermentation adds texture and nuance. Extended aging on lees further enhances the wine’s complexity, creating a Brut Champagne that is both rich and refined, with a bright, refreshing character.

Mes Favorites Vieilles Vignes is a versatile Champagne, pairing beautifully with dishes like roasted chicken, creamy risottos, or aged cheeses. Its balance of richness and freshness also makes it a delightful choice for celebratory toasts or as a luxurious aperitif. This non-vintage bottling is a testament to Hébrart’s skill in creating wines that are as expressive as they are elegant.

Champagne

Champagne boasts some of the world’s greatest luxury brands with Krug, Cristal and, of course, Dom Perignon. But it’s also home to hundreds of small dynamic producers—farmers who grow their own grapes (often organically) and make (often with natural methods) tiny amounts of pure and absolutely delicious wine that reflect the individual personalities of their villages and terroirs. Toast with these wines, for sure. But also treat them like the great wines they are: taste, drink, explore!
