Montenidoli is a high-elevation Tuscan estate in San Gimignano, beloved at Flatiron for wines that punch well above their reputation. Their rosato is something of an icon, the wine some of us reach for first when warm weather hits. This one is made from Canaiolo, a native red grape better known as a blending partner in Chianti, here given a starring role. The altitude keeps everything fresh and lifted. It's a serious-but-joyful pink with more depth than your average rose. Serve well chilled and don't overthink it.

Elisabetta Fagiuoli's Vernaccia has reached cult status for good reason. She describes her white grape as having 'the body of a red,' and she backs it up by fermenting all her wines with skin contact—a rarity in Tuscany. Farming organically on chalky-marine soil 200 meters above San Gimignano, she makes three distinct Vernaccias, each revealing different facets of the same terroir. Complex, long, totally original.
