Fer de Sang (Iron Blood) is Nicolas Carmarans's unapologetic expression of 100% Fer Servadou from old vines in Aveyron's Marcillac region. The steep limestone terraces at 250 meters altitude produce grapes with striking minerality, fermented via carbonic maceration and aged in old barriques. Carmarans, a Paris wine-bar pioneer turned full-time vigneron, champions indigenous varieties and minimal intervention winemaking in this remote corner of southwest France.
