Opera, also known as Ca' Montanari, has become a benchmark for what serious Lambrusco can be. Family-owned and certified organic, the estate sits in the hills south of Modena and farms its own fruit. The trick here is patience: where most Lambrusco rushes its second fermentation through in a couple of weeks, Opera takes a full six months, which gives finer, longer-lasting bubbles and more complexity. This is the dry (secco) style, made to drink with food, not for dessert. Frothy, savory and refreshing, it's everything good Lambrusco should be. Serve cold and have fun.
