Paolo Bea is the uncompromisingly old-school Umbrian estate that helped found Italy's natural wine movement, and Pagliaro is the single vineyard that produces their finest Sagrantino di Montefalco. Made with long macerations, indigenous yeasts and extended aging, this is Sagrantino at its most serious: a thick-skinned, deeply structured grape that demands patience. The 2004 has had two decades to soften its famously formidable tannins and is now in a mature, complex place, though a wine like this can keep evolving. Decant generously and give it air; this is a wine for contemplation.
