From the Umbrian estate that helped launch Italy's natural wine movement, this is Paolo Bea's Pagliaro, the single vineyard that yields their greatest Sagrantino di Montefalco. Sagrantino is one of Italy's most tannic grapes, and Bea's old-school approach, with long macerations, native yeasts and extended aging, builds wines made to outlast you. The 2005 has had two decades of bottle age to resolve those famously fierce tannins into something complex and harmonious. It's drinking in a mature window now; decant well ahead and give it time in the glass.
