Cult Umbrian Sangiovese from Paolo Bea, one of the original architects of Italy's natural wine scene. The Beas farm organically and make San Valentino with zero shortcuts: manual harvest, indigenous yeasts, long fermentations and extended aging in large old casks, then bottled raw, unfined and unfiltered. Grown on clay at altitude in Montefalco, it blends Sangiovese with Sagrantino and Montepulciano for a wine that's wild and elegant at once. The 2010 came from a celebrated, classically structured vintage and has aged into a mature, savory bottle from a private collection. Decant generously.

Paolo comes from a lineage reaching back 500 years; today he practices unrelenting non-interventionism—no additions except sulfur, no fining, no filtering, stainless steel and large Slovenian oak. His Sagrantino di Montalcino (both dry and passito versions) tastes like iron, cinnamon, and the earth of Umbria. A winemaker who won't compromise.
