Pascal Agrapart is the fourth generation in Avize, in the heart of the Côte des Blancs. His 12-hectare estate spans four Grand Cru villages, with some vines exceeding 60 years old. The Experience cuvée is his most radical creation: a Champagne made with nothing but grapes—no commercial yeast, no added sugar, no dosage. To achieve this, Pascal takes a finished base wine and adds unfermented pressed grape juice from the following vintage, allowing wild yeasts to trigger the secondary fermentation naturally. This tiny cuvée is only made when two successive vintages align. The result tastes like wet chalkboard, green apple, and sea air—pure expression of the chalky Côte des Blancs terroir. Extraordinary and genuinely unique in the world of Champagne.
