Pernand-Vergelesses sits in the fold of the Corton hill, cooler and later-ripening than its famous neighbors, which is exactly why its whites keep such cut. Les Combottes is a southwest-facing hillside parcel on well-draining clay — a cool site even for Pernand — farmed sustainably by a grower who sells to Seiichi Saito. Saito trained at Bize, Mugnier, Rousseau and Leflaive before founding Petit-Roy in 2017, and this gets the house treatment for whites: a slow 90-minute press, ambient-yeast fermentation, twelve months in used barrels and a few more in tank, with no new oak. It is village-level white Burgundy from a name most people haven't caught up with yet. The 2023 has the vintage's harmony and its clear-cut definition between sites.
