One of Napa's great traditionalist Cabernets, grown near the top of Spring Mountain by Philip Togni, who learned his craft in Bordeaux under Emile Peynaud. His estate at roughly 2,000 feet yields a Cabernet (with Merlot, Cabernet Franc, and Petit Verdot) that is deliberately built to age, all structure, minerality, and restraint rather than upfront flash. This 1999 in magnum is squarely in mature mountain-Cabernet territory, and the large format means it has aged slowly and evenly. A serious, savory bottle for a table that appreciates the difference time makes.
