A benchmark Napa traditionalist Cabernet from one of the valley's most respected old-school hands. Philip Togni trained in Bordeaux under Emile Peynaud before establishing his Spring Mountain estate at about 2,000 feet, where he grows Cabernet alongside Merlot, Cabernet Franc, and Petit Verdot. The wines are deliberately structured and mineral, built to age for the long term rather than charm early. This 2001 in magnum has had more than two decades to soften and gain savory complexity, and the larger format keeps it fresh and slow-evolving. A mature mountain Cabernet for a special table.
