This is the wine Ravines was built to make: a truly dry Finger Lakes Riesling from the house that helped make dry, mineral-driven Riesling the region's calling card. Danish-born Morten Hallgren trained in France, with degrees in astrophysics (really) and enology. He ran the cellar at Dr. Konstantin Frank before he and his wife Lisa started Ravines above Seneca Lake. The winery still calls the Dry Riesling its flagship. The 2023 comes from two estate vineyards. Limestone Spring gives the wine the limestone that runs through its soil. Sixteen Falls sits in Ovid, on the east side of the lake's deepest stretch, with clay-heavy shalestone and vines trained almost entirely on a lyre trellis. That trellis was invented by Alain Carbonneau, Hallgren's viticulture professor in Montpellier, to catch more sun. 2023 is a milestone vintage too: it was the first year that could qualify for the Finger Lakes sustainable vineyard certification, and every Ravines estate vineyard qualified. Tasting Notes & Food Pairings

Perfect Pairings

Raw oysters with mignonette, Thai green papaya salad, pork schnitzel with lemon, smoked trout on rye, or a platter of sushi and sashimi.

Tasting Profile

Expect the classic dry Finger Lakes Riesling profile: lime, green apple and white peach, with a stony, wet-slate minerality. Typically light to medium-bodied with racy, mouthwatering acidity, it finishes bone-dry, crisp and long. Think dry Alsace Riesling rather than the sweeter German styles.
