Old-vine Chardonnay from the Jura, made with the same restraint that Burgundy insiders have prized here for two decades — bright, linear, cut with the mineral snap that makes Jura whites their own thing rather than an imitation of the Côte. Jean Rijckaert spent ten years as technical director at the négociant Verget before striking out on his own in 1998, first with four hectares around Viré in the Mâcon, then five hectares of Savagnin, Chardonnay and Poulsard in Arbois. Having no heir, he met Florent Rouve at a Saint-Véran tasting in the early 2000s and handed the domaine over to him piece by piece — Rouve took over officially in 2013 and still works to Rijckaert's minimalist blueprint: native yeasts, barely any lees stirring, and a long élevage before the wine is allowed out. The Jura wines are made at Villette-lès-Arbois, minutes from the vines, in a cellar kept separate from the Mâconnais operation at Davayé, because the work stays better when it stays close. The Vieilles Vignes designation on the label is the producer's own, and this is a serious, tightly-wound white for the price of a weeknight bottle.
