From the limestone-rich amphitheater of Pajé, Roagna's historical flagship Barbaresco carries the mineral purity of one of Barbaresco's most distinguished vineyards. Pajé's calcareous marl and active limestone give this wine extraordinary structure and aging potential. The vines average over 40 years old. Roagna's traditional approach brings extended maceration and years in Slavonian oak before release, yielding a wine built for the cellar. Luca Roagna is the fifth generation in a family that's been making wine in Barbaresco since the 1850s. His Dolcetto comes from vines over 45 years old, fermented with real patience and aged in neutral oak. This is the kind of wine that makes you wonder why everyone doesn't make Dolcetto this seriously.

VineyardPaje cru in Barbaresco. The parcel is Roagna's largest in Barbaresco, but is still only 1.83 hecatares.OrientationSouthwest.SoilPajé is particularly rich in calcareous marl soil with a high content of active limestone.ViticultureThe vines that go into this wine range from 25 to 50 years old. All younger vines go into the Langhe Rosso. Older vines go into the Paje Vecchie Viti bottling.VinificationFermentation lasts ten days in large wood casks. They ferment with a pied de cuvee made from their indigenous yeasts. They then use the technique of submerged cap -- which can last 60-70 days.AgingThe wine is then aged in large neutral French botti. The oak Luca uses is never toasted but instead made by using hot steam instead of flame. The wine is normally aged for five years in wood before release.
