Romain Le Bars' Nouveau Nez is a celebration of carbonic maceration's joyful spirit: eight days of whole-bunch fermentation in a blend of Grenache, Cinsault, and Carignan creates a wine of pure energy. Romain le Bars is a 34-year-old Parisian who dropped out of law school, worked restaurants, and eventually left France to make wine in Tavel and Lirac in 2018 with 11 hectares. Light, natural wines—blends of Grenache and Syrah, carbonically macerated or direct press, aged in used wood. No fining, no filtration, almost no sulfur. Minimalist to the bone and all the better for it.
