Tavel is the one appellation in France that makes nothing but rose, and it makes it dark and savory - a wine for the dinner table, not the beach chair. Romain le Bars spent seven years alongside Eric Pfifferling at L'Anglore before starting his own label, and that apprenticeship - energy over power - is audible in everything he bottles. He came to the southern Rhone from Paris in 2012, bought 1.2 hectares in Tavel in 2018 and made his first vintage in a garage; he now farms around nine hectares organically across Tavel, Lirac and the Vin de France land around them, with native yeasts, no fining or filtration and very little sulfur. His Tavel is Grenache with Cinsault and Syrah grown on sand, limestone and gravel terraces, made with a mix of carbonic maceration and direct pressing: the carbonic brings lift and perfume, the pressed fraction brings flesh. At 13% it drinks as much like a light red as a rose. Serve it cool rather than cold, and open it with food.

Romain le Bars is a 34-year-old Parisian who dropped out of law school, worked restaurants, and eventually left France to make wine in Tavel and Lirac in 2018 with 11 hectares. Light, natural wines—blends of Grenache and Syrah, carbonically macerated or direct press, aged in used wood. No fining, no filtration, almost no sulfur. Minimalist to the bone and all the better for it.
