Columella is the wine that rearranged South African fine wine. Eben Sadie made the first one in 2000 from old, dry-farmed bush vines in the Swartland at a moment when the country's large wineries were routinely ripping out old plots to plant international varieties; his fierce defense of those vineyards rippled outward, and a generation of Cape growers now works the way he does. The blend is led by Syrah with Mourvedre, Grenache, Cinsaut, Carignan, Tinta Barocca and Pinotage, drawn from a mosaic of old parcels, fermented in concrete and then raised a year in French oak and a second year in large foudre on its lees before bottling unfined and unfiltered. The 2023 came out structured and floral - firm-tannined, red-fruited, powerful without being heavy - and it has real cellar life ahead of it. Decant an hour if you are opening it now, or put it away for a decade.

Perfect Pairings

Grilled lamb chops with rosemary, oxtail or short-rib braise, boerewors off the coals, or duck with olives. It has the frame for venison as well.

Tasting Profile

Dark red fruit, dried herbs, violets and a smoky, iron-like mineral edge. Full-bodied but lifted, with firm fine-grained tannins and bright acidity holding it together. Long and savory. Young - it wants air or time.
