Champagne Frédéric Savart was founded in 2005 when Fred, age 23, left the cooperative and took a non-interventionist approach—stainless steel fermentation, barrel aging, low dosage. Just 4 hectares of Pinot Noir and Chardonnay in Écueil, Premier Cru of the Montagne de Reims. These are reference-point Champagnes for collectors seeking terroir-driven, small-production grower wine. The opposite of the corporate model. Serious stuff.

But it’s also home to hundreds of small dynamic producers—farmers who grow their own grapes (often organically) and make (often with natural methods) tiny amounts of pure and absolutely delicious wine that reflect the individual personalities of their villages and terroirs.
