Halbtrocken means "half-dry," and that's the whole appeal: a Mosel Kabinett with just enough sweetness to soften Riesling's acidity without getting anywhere near dessert. It comes from the Zeltinger Himmelreich, the largest of Selbach-Oster's three Zeltingen vineyards and the coolest of them. That site tends to give lime-green, herbal Rieslings with very zippy acidity, which is exactly what you want behind a touch of sugar. The 2024 comes from a slightly elevated, west-facing parcel in the upper part of the hill, where the Selbachs usually source their Kabinetts. In the cellar, the house sticks to the old ways: most wines ferment spontaneously in big old 1,000-liter Fuder casks, and nothing is added except sulfur. It's an easygoing everyday bottle from one of the Mosel's most reliable families, and a good reason to keep a Riesling in the fridge.

Tasting Notes & Food Pairings

Perfect Pairings

Thai green papaya salad, pork larb, Sichuan dan dan noodles, spicy tuna rolls, smoked trout with crème fraîche, or a ham and Gruyère sandwich.

Tasting Profile

Tart plum and citrus on the nose. Off-dry, with a slender palate of lemon and greengage (Reine Claude) plum. Crisp acidity keeps the sweetness in check, and it feels light and easy all the way to the finish.

WINE GUIDES

German Wines

Is there a better grape than Riesling? Is there a better value? Its fruit purity, its perfume, and its mineral nuance are all unparalleled. And for centuries, the top German Rieslings were priced accordingly: at least as expensive as the top red wines of Bordeaux and Burgundy. But nowadays you could spend a lifetime exploring Germany’s great Riesling-producing regions while staying well within your budget. You might take an occasional break to try Germany’s other white grapes or perhaps a glass of Spätburgunder (the local name for Pinot Noir). It’s time to get started!
