Cerasuolo d'Abruzzo is a rosé by law — a pink wine of Montepulciano, named for the cherry color it's supposed to have — and in the hands of the Valentini family in Loreto Aprutino it becomes one of the most sought-after pink wines on earth. Forget the pale, whispering stuff: this is deeply colored, savory, and structured enough that it drinks more like a light red than a poolside pour. The family is famously exacting, bottling only a fraction of what they grow and releasing on their own schedule, which is why bottles are scarce and spoken for almost immediately. Give it a real glass, don't over-chill it, and treat it like the serious wine it is.
