To many of us, Willi Schaefer is the platonic ideal of Mosel Riesling, and Graacher Himmelreich is the house at its most charming and approachable. Himmelreich means "kingdom of heaven", and the family thinks the name may come from the site's exposure. The vineyard wraps around the estate's Domprobst site: a steep slope of weathered Devonian slate facing south-southwest, sheltered from wind and frost. Himmelreich is buoyant, floral and ready from day one. The gently off-dry style is a family inheritance. Christoph's grandfather Willi settled on very lightly sweet wines with perfect structure after the cold snap of 1943–44 left wines with unfermented sugar. In 2025 the vineyards were in magnificent shape right up to harvest, but grape health then varied so widely that the Schaefers changed their picking plan day by day, finishing on 6 October, the earliest end to harvest in the estate's history. With Riesling from ungrafted vines up to a century old, Schaefer bottles are never easy to find, and this Kabinett is the friendliest way in.

More about Willi Schaefer

Christoph and Andrea Schaefer don't have much land (just over four hectares), but that’s not really why their wines are so hard to get. If they had twice the acreage it would still sell out many times over. The wines are just that good – and that coveted by collectors (and drinkers!) worldwide.

In fact, they're a sort of platonic ideal of Mosel Riesling. The family is one of Germany’s great traditionalist producers, doing everything old school and low tech, but making absolute pure and marvelously complex wines – the kind that are often called “filigreed.” With lots of ungrafted old vines (phylloxera doesn't do so well in the stony slate soils) they have intense minerality, but with plenty of sun on the steep, steep slopes, there’s tons of laser-focused fruit, too.

Tasting Notes & Food Pairings

Perfect Pairings

Thai larb or green papaya salad, Sichuan dan dan noodles, pork schnitzel with apple compote, smoked trout with horseradish cream, fresh goat cheese with stone fruit.

Tasting Profile

Expect the classic Mosel Kabinett profile: citrus, white and yellow peach, green apple and spring blossom, with a cool slate minerality. Light-bodied and gently off-dry, the hint of sweetness is balanced by bright, fine acidity, so it reads fresh rather than sugary. Typically buoyant and open from the start, finishing clean, juicy and long.

WINE GUIDES

German Wines

Is there a better grape than Riesling? Is there a better value? Its fruit purity, its perfume, and its mineral nuance are all unparalleled. And for centuries, the top German Rieslings were priced accordingly: at least as expensive as the top red wines of Bordeaux and Burgundy. But nowadays you could spend a lifetime exploring Germany’s great Riesling-producing regions while staying well within your budget. You might take an occasional break to try Germany’s other white grapes or perhaps a glass of Spätburgunder (the local name for Pinot Noir). It’s time to get started!
