Willi Schaefer, Graacher Himmelreich Riesling Spatlese, 2025

Himmelreich is the Schaefer vineyard you don't have to wait for, and 2025 was a year the family was especially proud of its Spätlesen. They found them so varied that they chose not to offer any Spätlese as an auction wine at all. In the Schaefers' telling, Himmelreich gives the silkier, more charming of their Graach Rieslings: buoyant, floral and open from day one. Domprobst, the site it surrounds, takes longer to emerge. Himmelreich is a VDP Grosse Lage of weathered Devonian slate facing south-southwest, on slopes of 45 to 75 percent between 110 and 325 metres, and it's well sheltered from wind and frost. (The name means "kingdom of heaven," and the family thinks it may come from the site's exposure.) 2025 called for strict selection at the vine: a run of rainy, fairly warm weather in September meant changing the picking plan day by day, and harvest finished on October 6, the earliest finish in the winery's history. Christoph and Andrea Schaefer, who met while studying enology at Geisenheim, decide by taste rather than by numbers and ferment with natural yeast. To many of us this house is the platonic ideal of Mosel Riesling, and a young Himmelreich Spätlese is the friendliest way to meet it.

More about Willi Schaefer

Christoph and Andrea Schaefer don't have much land (just over four hectares), but that’s not really why their wines are so hard to get. If they had twice the acreage it would still sell out many times over. The wines are just that good – and that coveted by collectors (and drinkers!) worldwide.

In fact, they're a sort of platonic ideal of Mosel Riesling. The family is one of Germany’s great traditionalist producers, doing everything old school and low tech, but making absolute pure and marvelously complex wines – the kind that are often called “filigreed.” With lots of ungrafted old vines (phylloxera doesn't do so well in the stony slate soils) they have intense minerality, but with plenty of sun on the steep, steep slopes, there’s tons of laser-focused fruit, too.

Tasting Notes & Food Pairings

Perfect Pairings

Thai larb or green papaya salad; Sichuan dan dan noodles; roast pork belly with apples; smoked trout on rye with crème fraîche; mild washed-rind cheeses like Époisses.

Tasting Profile

Expect the silky, charming side of Mosel Riesling: citrus, white and yellow peach and floral notes over a cool, slate-driven minerality. Typically light-bodied and off-dry, its gentle sweetness is balanced by bright, fine acidity, and it finishes clean, juicy and lifted. It's usually open and approachable from release.

WINE GUIDES

German Wines

Is there a better grape than Riesling? Is there a better value? Its fruit purity, its perfume, and its mineral nuance are all unparalleled. And for centuries, the top German Rieslings were priced accordingly: at least as expensive as the top red wines of Bordeaux and Burgundy. But nowadays you could spend a lifetime exploring Germany’s great Riesling-producing regions while staying well within your budget. You might take an occasional break to try Germany’s other white grapes or perhaps a glass of Spätburgunder (the local name for Pinot Noir). It’s time to get started!
