A classic London dry-style gin with an unlikely foundation: jasmine rice grown in the Mississippi Delta, fermented using a method borrowed from sake making. That rice spirit is the same remarkably clean base Wonderbird uses for its flagship gin, and here it holds up a juniper-forward gin with bright citrus and savory botanical notes. Each botanical is distilled on its own and the distillates are then blended, which is the slow way to make gin and lets every element be tuned separately. Wonderbird is North Mississippi's first distillery, started by friends Chand Harlow and Rob Forster just outside Oxford, to make spirits that honor the state's farmland. It belongs in martinis, G&Ts and Negronis. It also has a far better story than most gins you'd pour that freely.

Oysters on the half shell with a dry martini, fried catfish or fried green tomatoes with a G&T, Gulf shrimp cocktail, smoked fish dip with saltines.

Tasting Profile

Juniper comes first, followed by citrus from Meyer lemon and lemongrass. Coriander, angelica, pine, bay leaf and celery seed add savory, herbal notes. The rice base spirit is clean. Bottled at 42% ABV (84 proof).
