Bonnet-Cotton, run by Pierre Cotton and Marine Bonnet, has become one of Beaujolais's most exciting low-intervention addresses—organic farming, native yeasts, almost no sulfur, aging in old foudres. 'Les Grilles' comes from steep, south-facing slopes of volcanic blue granite on Mont Brouilly, the soil that gives Côte de Brouilly its mineral spine and extra concentration. Fermented with native yeasts via semi-carbonic maceration, this is Gamay with both energy and depth. The 2023 has the structure to drink now with air or hold a few years.

More about Bonnet Cotton

In 2016, we trekked to Beaujolais to meet two young men whose bottles had already left an outsized mark on our palates, confirming that for once, the wine world’s relentless buzzing was onto something legitimate. After our first visit with Yann Bertrand, we headed to the cellar of his best friend, Pierre Cotton. A former motorcycle mechanic who transitioned into an elite vigneron with the guidance of Yann and a few fellow Young Turks, Pierre was already proving his talent. It was on that same visit that we met Marine Bonnet. A decade later, the landscape has shifted beautifully: Marine is now Pierre’s life and business partner, and the estate has evolved into the powerhouse known as Bonnet-Cotton.

A trained agronomist, Marine is helping Pierre transform their historic family cellar in Odenas into a hub of environmental ambition. While they hold prestigious parcels in Brouilly, Côte de Brouilly, and Fleurie, their work goes far beyond just making great wine. They are busy planting trees and restoring habitats to combat climate change, ensuring their granite soils stay vibrant for generations to come.

In the cellar, the approach is refreshingly precise and playful. They rely on native yeasts and century old foudres to let the fruit speak for itself, often skipping sulfur entirely to maintain absolute purity. Marine’s scientific eye and Pierre’s natural talent have shifted the domain toward organic brilliance, producing wines that are limited, highly coveted, and consistently delicious. They have managed to take a centuries old family legacy and make it feel entirely new and exciting.
