Bonnet-Cotton, run by Pierre Cotton and Marine Bonnet, has become one of Beaujolais's most exciting low-intervention addresses—organic farming, native yeasts, almost no sulfur, aging in old foudres. 'Les Grilles' comes from steep, south-facing slopes of volcanic blue granite on Mont Brouilly, the soil that gives Côte de Brouilly its mineral spine and extra concentration. Fermented with native yeasts via semi-carbonic maceration, this is Gamay with both energy and depth. The 2023 has the structure to drink now with air or hold a few years.
