Cavallotto is Castiglione Falletto's quiet titan — a family estate working uncompromising traditional methods on the Bricco Boschis hill, where they own the lion's share of the cru. Vigna San Giuseppe is the top parcel within Bricco Boschis, southwest-facing on a beautiful ridge of sixty-year-old vines. The Riserva treatment means roughly five years in big Slavonian botti before bottling — no shortcuts, no small oak, just time and patience. The 1999 vintage was a great classical Barolo year, and twenty-six years on, this wine has arrived at full maturity with all its architecture intact. More about Cavallotto

The village of Castiglione Falletto is rich with superstars—Giuseppe Mascarello, Brovia, Vietti, Scavino—and Cavallotto stands easily with the best of them. Of this elite group, Cavallotto's wines stand out for their deep fruit, brooding structure, rose petal aromatics, and incredible longevity.

Most of Cavallotto's grapes come from a hill called Bricco Boschis. Cavallotto owns all of it. Thanks to a mostly southern exposure at high altitude and a complex mix of limestone and clay, it's considered one of the top crus of a village known for many great crus. Cavallotto's San Giuseppe Riserva is made from the best grapes from the vineyard's oldest vines, mid-slope.

Cavallotto's other Riserva comes from Vignolo. It is next door to Bricco Boschis and just a little lower down the slope. The wine tends to be less powerful and more floral, and is perfect for drinking on a slightly earlier timescale than the San Giuseppe.

Perfect Pairings

Brasato al Barolo, a porcini-stuffed roast, or wild boar ragu over pappardelle. The full structure rewards rich fare. Close with Castelmagno or a wedge of aged Bra.

Tasting Profile

Dark cherry, dried rose, sweet leather, tobacco, and licorice. The palate is full and savory, with finely resolved tannins, persistent structure, and a long, mineral, distinctly Castiglione Falletto finish.
