Domaine d'Aupilhac is one of the original benchmarks for quality Languedoc, founded by Sylvain Fadat in 1989 and farmed organically and biodynamically in the cool heights of Montpeyroux. This Montpeyroux cuvée is the estate's flagship red, a blend built around Mourvèdre and Carignan with Syrah and Grenache, grown on the calcareous, blue-marl slopes that give the wine its structure and freshness despite the southern sun. It's the bottle that put Fadat on the map. This 2010 is a back-vintage from a strong year, now mature: expect the wine to have shed its early grip and moved into savory, leather-and-garrigue complexity. Decant and enjoy a Languedoc red in full stride.
