Monts Damnes—the "damned mountains"—earned its name from a slope so brutally steep that farming it feels like a curse, and it's the benchmark site of Chavignol, source of some of Sancerre's most sought-after wines. Boulay has worked this south-facing Kimmeridgian marl since 1982, and the warm exposure ripens the fruit fully while the marine-fossil soils keep everything vibrant and mineral. Farmed organically and vinified with native yeasts in neutral barrels, this is Sauvignon Blanc as terroir statement: ripeness and minerality held in perfect equilibrium. If you only try one Boulay Sancerre, make it the one that defines the village.
