Girard-Bonnet's roots are in Le Mesnil and Oger, so À Deux Pas stands out in the range: it's the estate's Avize Grand Cru, an all-Chardonnay Blanc de Blancs from another of the Côte des Blancs' great villages. Avize is familiar ground for Paul Girard. Born in 1995, he studied viticulture and enology there before coming home in 2018. He then combined his father's Le Mesnil vines with his mother's in Oger to start a tiny estate: 12 hectares of Chardonnay making 10,000 to 20,000 bottles a year, with most of the fruit still sold off. The farming is serious. The estate was certified organic in 2022, and this cuvée is certified biodynamic. In the cellar, Paul leaves his wines in barrel for a long time without sulfur and lets malolactic fermentation happen on its own (or not, barrel by barrel). It's finished Extra Brut, so the village comes through clearly.

More about Girard Bonnet

Paul Girard's instincts did not come from nowhere. He grew up in the Côte des Blancs, inheriting vineyards from both his father (Les Mesnil), and mother (Oger). He has lived and breathed – and smelled and drunk – Chardonnay from Champagne all his life.

He follows somewhat in the style of Alexandre Chartogne, with a mix of classicism and the most rigorous practices of Grower producers today (organic farming, minimal SO2 additions, etc.). The resulting style is clean and taut, but vibrant in a way that reflects great farming and terroir. There is an intensity and precision here that is already plainly visible, but that will only become more apparent as bottles develop over the next few years or so.

Tasting Notes & Food Pairings

Perfect Pairings

Raw oysters with mignonette; seared scallops in beurre blanc; warm gougères; aged Comté; sushi, especially hamachi and sea bream; lobster roll with lemon mayo.

Tasting Profile

Expect the classic Avize Blanc de Blancs profile: lemon, green apple and white flowers over a chalky, saline core, carried by a fine mousse. Long barrel ageing typically adds a rounder texture and hints of brioche and toasted nut, while the Extra Brut dosage keeps the finish bone-dry, taut and mineral, with bright, lingering acidity.

Champagne

Champagne boasts some of the world’s greatest luxury brands with Krug, Cristal and, of course, Dom Perignon. But it’s also home to hundreds of small dynamic producers—farmers who grow their own grapes (often organically) and make (often with natural methods) tiny amounts of pure and absolutely delicious wine that reflect the individual personalities of their villages and terroirs. Toast with these wines, for sure. But also treat them like the great wines they are: taste, drink, explore!
