This is Girard-Bonnet at its most specific: one named vineyard, the Caferlane lieu-dit, bottled on its own as a 2020 Grand Cru Blanc de Blancs. Oger is the village that came to Paul Girard through his mother's family. The Bonnets were grower-makers there, making about 140,000 bottles a year in the 1980s. Paul, born in 1995, came home in 2018 after studying viticulture and enology in Avize and business in Bordeaux. He joined the Oger vines with his father's Le Mesnil holdings to found Girard-Bonnet. The estate grows nothing but Chardonnay on 12 hectares. It's certified organic, is working toward biodynamic certification and makes only 10,000 to 20,000 bottles a year, so a single-site cuvée is a small slice of a small production. Caferlane has also gone into the estate's Recueil Extrait blend. Here you get to taste it alone, and the Extra Brut finish keeps the focus on the site. Tasting Profile

Expect the classic Côte des Blancs Blanc de Blancs profile: lemon, green apple and white flowers, with hints of brioche and a chalky minerality. Extra Brut dosage typically makes it bone-dry and taut, with fine, persistent bubbles, bright acidity and a long, saline finish. Think of it as a more precise, mineral version of everyday Brut Champagne.
