Olivier Lamy may be Saint-Aubin's most obsessive vigneron, and he applies the same restless precision when he crosses the road into Chassagne-Montrachet. Le Concis du Champs is a village-level lieu-dit on heavy clay soils at the southeast edge of the village, planted in 2005 at the famously tight Lamy density. Hand-harvested, fermented on indigenous yeasts, raised on lees in mostly-used 300L and 600L barrels for around two years and then rested in tank, this is Chardonnay that reads less like a village wine and more like a young 1er Cru. The 2019 vintage brought concentration and ripe orchard fruit to the Côte de Beaune, and six years on, this bottle is just opening up.

Olivier Lamy took over this Saint-Aubin estate in the 1990s and transformed it from solid to legendary. Nineteen hectares of Côte de Beaune terroir (two-thirds Chardonnay) worked with obsessive attention and lutte raisonnée. His Haute Densité cuvées, from vines planted at unusually high density, show what happens when you farm like you mean it. Concentrated, complex, Saint-Aubin's new standard.
