Sebastien Mouzon puts it this way: in Verzenay the mineral is inside the fruit, in Verzy the fruit is inside the minerality. L'Angelique is his vintage Blanc de Blancs, all Chardonnay from the eastern, chalkiest section of Verzy, where the chalk sits about a metre down and the topsoil is scattered with silex. Mouzon is the ninth generation of his family in this Grand Cru village, farming biodynamically since 2008 and planting trees among the vines from 2011. The wine spends five years on its lees before disgorgement and is finished Extra Brut, with only a whisper of dosage. This is grower Champagne built on stone rather than fruit - taut, saline, and worth a real wine glass instead of a flute.
