A true rose de saignee, which very few in Champagne bother with anymore: rather than blending a splash of red wine into white, Sebastien Mouzon gives the Pinot Noir time on its skins and bleeds off the juice once it has taken on colour. The fruit comes from a chalky, frost-prone parcel in the eastern valley of Verzy, farmed biodynamically by the ninth generation of the family, with trees planted through the vines since 2011. Three-plus years on the lees and an Extra Brut finish keep it firmly on the savory side of pink. Expect something wild and herbal rather than pretty and strawberry-flavoured, with Verzy's stony spine running underneath. Pour it at cellar temperature, not ice cold.

"Disgorged in February 2021 with 1.5 grams per liter dosage, the NV Rosé de Saignée L’Incandescent is derived from the 2017 vintage and saw a 22-hour maceration. Mingling aromas of red berries and plums with notions of orange rind, exotic spices and forest floor, it's medium to full-bodied, vinous and sapid, with a pretty core of spicy fruit, lively acids and a savory finish. There's a certain fragility to the wine that leads me to suspect it will be at its best young." —William Kelley
