Pax Mahle made his name on profound California Syrah, but Helios is his love letter to the Loire: a Chenin Blanc with cutting freshness and a honeyed, waxy core. The fruit is whole-cluster pressed from three organically farmed California sites, from Amador County's Lyman Ranch to the Santa Cruz Mountains and Alder Springs up north. Fermented in stainless steel and Stockinger barrels, it stays mineral and taut rather than oaky. This is a serious, food-friendly white that drinks well above its station.
