Cote des Bar grower Champagne at its most transparent. Remi Leroy returned home to Meurville in 2006 after a Bordeaux oenology degree and now farms 9.5 hectares spread across Meurville, Bergeres, and Fontaine, all on the Kimmeridgian limestone that defines the southern Aube. This Brut Nature is his non-vintage blend disgorged with zero dosage: 70% Pinot Noir, 20% Chardonnay, 10% Meunier, the 2022 vintage as base. Each parcel is pressed on a Coquard PAI, fermented separately in steel or oak, and bottled without fining or filtration. With no sugar added at disgorgement, you taste the wine itself: chalky Aube Pinot fruit, brioche from lees, and a long, savory finish. Champagne for people who want the place, not the makeup.

Richard Leroy (the person behind this small operation was originally from Paris—left a banking career in 1996 to become a winemaker, which is either the most romantic or most insane career pivot ever). Tiny parcels of organic, later biodynamic Chenin Blanc in Coteaux du Layon, declassified to IGP Vin de France because he got tired of the administrative nonsense. Minimal intervention, volcanic soils, and the kind of purity that made him a cult figure after a comic strip about him went viral. Rare and obsessive.

Perfect Pairings

An aperitif that doesn't quit. Pour with oysters on the half shell, salt-cod brandade, a roast chicken thigh, or aged Comte. The cut of zero dosage also handles ramen, fried chicken, and anything with a hit of vinegar.

Tasting Profile

Pinot-led and chalky, with green apple, citrus pith, brioche, and a brush of toasted hazelnut from lees aging. Bone-dry, taut, and savory on the finish, with the bright Aube acidity holding everything in place.
